Perhaps more importantly though, we've served millions of people in our stores nationwide and done thousands of tours of our hives here in Savannah. I had a very bad surfing accident that required 16 stitches - I kept the wound moist with honey so that it wouldn't dry out, and the honey is the best moisture level and antimicrobial content environment for your skin to grow back. I am not a doctor & cannot make medical claims, but in my experience and life, honey is the only thing that I put on wounds, both mine and my families. The argument can be made that fresh honey is potentially better for you than older honey, as you'd get the benefits of the probiotic bacteria. What I have recently learned that I find fascinating, is that when bees are carrying the nectar back to the beehive, they introduce 13 or 14 probiotic bacteria to the honey that helps prevent the nectar from fermenting. Some of the large corporations that we sell honey to as an ingredient for their products require a bacterial test for all ingredients, regardless of likelihood of contamination. We're required to test for bacterial contaminants - we trust our beekeepers, but we're still required cut the cards - we're looking for miticides, pesticides, antibiotics, and other contaminants.
